1 kg ripe tomatoes
1 cucumber
1/2 green bell pepper
1 garlic clove
50 g day-old bread (soaked)
50 ml olive oil
20 ml vinegar
Salt
Cold water (optional, to thin)
Chop all vegetables and soak the bread in water.
Blend tomatoes, cucumber, pepper, garlic, and bread until smooth.
Add olive oil, vinegar, and salt. Blend again.
Strain for a smoother texture (optional).
Chill well and serve cold with diced veggies or croutons.
