1 shortcrust pastry (homemade or store-bought)
150 g bacon or lardons
3 eggs
200 ml heavy cream
100 ml milk
100 g grated cheese (Gruyère or Emmental)
Salt, pepper, nutmeg
Preheat oven to 180 °C (350 °F).
Line a tart pan with the pastry and prick the bottom.
Fry bacon until golden, then spread on the crust.
In a bowl, whisk eggs, cream, milk, cheese, and seasoning.
Pour the mixture into the crust.
Bake for 30–40 minutes until golden and set.
Let cool slightly before slicing.
