1 whole chicken (cut into pieces)
200 g mushrooms
100 g bacon (lardons)
2 carrots (sliced)
1 onion (chopped)
2 garlic cloves (minced)
500 ml red wine
2 tbsp flour
Thyme, bay leaf, parsley
Salt and pepper
Olive oil or butter
In a large pot, brown chicken pieces in oil. Remove and set aside.
Sauté bacon, then add onion, carrots, garlic, and mushrooms.
Return the chicken to the pot. Sprinkle with flour and mix well.
Pour in wine to cover, add herbs, and season.
Cover and simmer on low heat for 1.5–2 hours until tender.
Serve with mashed potatoes or crusty bread.
